2019 Cabernet Sauvignon – Riserva Collection, Rubino Estates Winery

This wine was awarded Best of Class in the San Francisco Chronicle Wine Competition and 92 points from Wine Enthusiast, and offers richly plush notes of marionberry, plum, cherry, violet, and vanilla. It’s the quintessential wine for a delicious steak dinner. We selected this vintage of Riserva Cabernet from the library and fell in love with the maturity and full-bodied nature of the tannin, with integrated roundness and just the right amount of ripeness.

2020 Sangiovese – Riserva Collection, Rubino Estates Winery

This bright and light red varietal is a traditional Italian wine. It is exceptionally prevalent in the old world and grows like a dream in California. This vintage offers a very characteristic nose for our Saugiovese, with notes of wild strawberry, vivacious red fruit, and a touch of lychee. A hint of black pepper peeks through on the palate, and rich cherry flavor accents the lingering finish. A very smooth body is accented with sassy floral notes and a mid-weight palate.

2020 Ferrario – Famiglia Collection, Rubino Estates Winery

Velvety and elegant, each sip dances with jammy fruit and playful floral aromas, all on a rich backdrop of purple fruit accents. This wine is a club-exclusive blend, named in honor of Ernest Ferrario. Ferrario was an Italian immigrant and the proprietor of the Estate Vineyard from 1921-1975. By the mid-twentieth century, the Ferrario family was well-known for their quality wines, especially their Zinfandel. This blend honors the Ferrarios by combining Barbera—an Italian varietal, and Zinfandel—Ferrario’s specialty. The 2020 vintage components are 50% Zinfandel, 28% Petit Verdot, 21% Barbera, & 1% Petite Sirah.

2019 Petite Sirah – Reserve Collection, Ruby Hill Winery

This excellent Reserve Petite Sirah is deep and soulful. A velvet curtain envelops the senses, rich with classic Petite Sirah aromas and elevated by silky and graceful notes on the palate. Enjoy scents of violet, plum, clove, allspice, vanilla, and black pepper, all flowing into the palate where they join a supportive base of dark fruit framed by lingering spice. This vintage is smooth yet structured, with balance in each sip. You can expect tannin-endowed wines like these to only improve with age, so it’s the perfect time to open that 2019 and get lost in the luxury of each sip.

2021 Chardonnay – Reserve Collection, Ruby Hill Winery

This wine continues our reputation for phenomenal Chardonnay. Capturing the essence of California sunlight, this golden beauty opens with a classic aroma adorned with floral allure. Splendid notes of orange blossom swirl with essences of clover honey and hints of stone fruit. Toasted oak influence supports these notes with flavors reminiscent of an orange almond tart. Rich body and unctuous mouthfeel make each sip luxurious, relaxing into a smooth and flavorful finish.

2020 Riverbed Red – Gem Collection, Ruby Hill Winery

This club-exclusive blend is a delight to drink. A complex aroma opens with vibrant fresh fruit including juicy raspberry and blackberry. Cozy hints of dark chocolate, vanilla, and baking spices round out the profile. The luscious finish emphasizes toasty baking spice notes. The body is rich, with a medium-plus mouthfeel, very smooth tannins, and flavors that match the aroma. This vintage is a luscious blend of 58% Cabernet Sauvignon, 29% Syrah, and 13% Petite Sirah.

This month, we are taking time to proudly celebrate our Riserva Petite Sirah. This varietal hails from France, but we have made it our own with a delicious California twist. Our soil and climate provide a unique flair that is uniquely suited for Petite Sirah, an endowment that this vintage displays exceptionally well. 

“This wine is concentrated with aromas of huckleberry, lingonberry, espresso bean and black pepper. The palate has flavors of black currant confiture, blueberry pie and blood-orange zest, intertwined with vanilla cream, dried tobacco leaf, bittersweet chocolate and a dry finish with silky tannins. Decant for an hour and enjoy”.

Petite Sirah is anything but “petite” on the palate. This name was earned in the late 1800s due to the size of the grapes themselves in comparison to Syrah grapes. The small size of the grapes and the thickness of the skin is the source of the deep, iconic tannin. Petite Sirah is known for its density, boldness, and body, and rightly so. The complexity and power within each bottle of our Petite Sirah are a product of varietal, terroir, and winemaking finesse.

Awarded 93 points by Wine Enthusiast, our 2021 Riserva Petite Sirah is an elegantly refined iteration, with soft European style. With a medium-full mouthfeel of rich purple velvet, this wine also brings excellent acidity that has continued to integrate over time. This lavish vintage was aged in 88% new oak, a blend of 73% French, 18% American, and 9% Hungarian, for 21 months prior to bottling. As winter melts into spring, this is our varietal of choice as we wait for the warm weather to spread across the Livermore Valley. 

Our favorite pairing ideas for this estate-grown Petite Sirah include chicken in mole sauce, balsamic rosemary burgers, eggplant parmigiana, aged gouda, and melted swiss cheese.

Petite Sirah is known for its density, boldness, and body, and rightly so. Our 2021 Riserva Petite Sirah entices the senses with cozy layers of rich texture and deep flavor, from blackberry and toasted marshmallow to cinnamon and espresso. The complexity and power within each bottle of our Petite Sirah are a product of varietal, terroir, and winemaking finesse. Don’t miss this underappreciated varietal. You might just find a new favorite!

Here in the Livermore Valley, spring is well on its way, but that hasn’t stopped a few cold snaps from taking us by surprise! Some evenings, we think it’s better to get cozy at home and prepare a hearty, comforting meal. If you have some time on your hands to make something special, then we recommend this recipe for Osso Buco in Red Wine sauce. Each bite of this classic Italian dish is rich and comforting, and the added depth from the red wine is absolutely scrumptious. 

Of course, we’ll take just about any excuse to open up a bottle while we’re cooking, but this recipe has our mouths watering already! For this recipe, with its deep savory notes and rich, nourishing bone marrow, we recommend pairing with our newly-released 2022 vintage of Landmark Founder’s Blend. This wine is a bold yet graceful blend of Petit Verdot, Barbera, Syrah, and just a touch of Cab, all grown here on our Estate. Let’s get cooking!

OSSO BUCO IN A RED WINE SAUCE

Ingredients

  • 4 cuts of veal shanks (beef shanks will also work)
  • 1 teaspoon kosher salt
  • ¾ teaspoon ground black pepper
  • 2 tablespoons dijon mustard
  • 1 cup all-purpose flour
  • 2 tablespoons duck fat (or butter)
  • 2 shallots, finely minced
  • 1 carrots, finely minced
  • 12 cloves garlic, finely minced
  • 1 tablespoon red curry paste (tomato paste will also work)
  • ⅛ teaspoon caraway seeds
  • 1 cup red wine
  • 2½ cups beef stock
  • 3 sprigs fresh thyme (or any other fresh herbs, rosemary works well)
  • Crusty bread, for serving

Instructions

  1. Preheat your oven to 325 degrees F. Dry the meat with paper towels, then tie each shank with butcher’s twine once around, if you have it (note: if you don’t have twine, they will probably fall apart a bit, but will still be delicious). Rub the meat with salt and pepper, then a light coat of dijon mustard. Dredge each piece of meat in flour, and set aside.
  2. Choose a large pan, preferably oven safe with a lid. Add your duck fat (or butter) over medium-high heat. Place your veal in the pan and sear on all sides for about 4 minutes, until well browned. Transfer the browned meat to a plate and set aside.
  3. In the same pan, add another tablespoon of duck fat or butter. Add in the shallots and carrots and stir for 5 minutes over medium heat, until softened, then add in the garlic and cook for 1 minute, until fragrant. Add in the curry or tomato paste, then the wine and stock and scrape up any browned bits. (Optional step: pour a glass of wine for yourself!)
  4. Place the meat back in the pan, along with the sprigs of thyme. Place a lid on the pan and place in a 325 degree F oven for 2 to 2½ hours, until tender. Serve alongside some crusty bread and be sure to scrape out all of the bone marrow!

Here at Rubino Estates, we like to stand up for under-represented varietals. Today, we are shining the spotlight on the beauty of Sangiovese, a bright red varietal of Italian origin. Often called by the nickname “Sangio” around here, this grape grows prolifically in its home region of Tuscany, and is the most planted varietal in Italy. In the US, it’s a rare, precious find, with fewer than 1,500 acres planted here in California.

In the 1980s, a subtle but impactful Cal-Ital movement took hold of the wine scene, wherein California’s wine lovers began to reach beyond French classics like Cabernet Sauvignon and Pinot Noir and explore the delicious world of Italian reds, Sangiovese included. Our estate has proudly cultivated Sangiovese since 2007, bringing Italian flair from California soil. In addition to our Sangiovese-forward blends, we produce a Sangiovese Rosé (Salute Rosé), our Riserva Sangiovese, and Landmark Sangiovese

Individual Expression

The deep purple grapes of Sangiovese produce a gorgeous red color and characteristic cherry flavors. The growing environment and winemaking techniques then determine the lovely layers of notes that build on that rich cherry foundation, so you’ll find that every Sangiovese expresses itself with individuality. These gorgeous wines with phenomenal flavor are well-respected worldwide, especially in their starring roles in iconic old-world blends like Chianti Classico and Super Tuscans. 

2020 Riserva Sangiovese

Our Riserva Sangiovese, which we are celebrating as January’s Wine of the Month, boasts juicy flavors and aromas you can relish. With balanced elements of fruit, acid, and tannin, it’s a pairing superstar, especially with pizza and pasta, but also with rare steak, roasted chicken, mushroom dishes, and anything with tomato sauce. For our wine aficionados enjoying Rubino Riserva Sangiovese, expect vivacious red fruit notes of wild strawberry, rich dark cherry, and a touch of lychee on the nose and the palate. Through the end and the finish, look for a light accent of floral character, like fresh roses, and a sassy whisper of black pepper. This vintage was aged in 100% French oak and sports a luscious mid-weight, smooth profile.
